Another one that was easy to make and too good not to share! This mango avocado salad had that perfect blend of tart and sweet. Each bite hitting different cravings for me! It’s a great side to BBQ’d chicken or oven-roasted fish…and uhh, I don’t have to remind anyone that it’s almost summertime – how perfect is this recipe? Check it out!
1 Mango (ripe) 1 Avocado 1 Tomato 1 Cucumber Spring Mix (or your fave salad mix!) Balsamic vinegar (the thick kind or the water one) Extra Virgin Olive Oil (cold-pressed) Pinch of salt & pepper
Chop up your mango (video to be posted shortly on how to cut your mango wickedly fast!) into little cubes, your cucumber in rounds, your avocado in slices, and that tomato however you please! (Tomato not pictured in salad photo). Put your spring mix in the bowl, throw your fruit and veg on top, sprinkle your salt and pepper, drizzle the oil and vinegar to taste, toss and enjoy! This may be the best hit at your next summer party! And hey, if you’re enjoying a beer or two, you can feel pretty damn balanced that you just got some fruit and veg into your body as well!
