Smashed Avocado & Basil Dressing

Or dip…or mayo…whatever you want to call this – it’s heavenly and you need to try this immediately.  Seriously…drop that phone, tell your friend you have to call them back — better yet, pick up your friend and take them grocery store with you and make them buy this stuff too.

It was too easy to make and too good not to share.  If you need another reason to get some healthy fats and a great protein source into your diet then here it is!


 1 Avocado (ripe)
 1 Lemon (juiced)
 1/2 Cup of fresh basil (lightly packed)
 1 tsp Raw honey
 1 Giant clove of garlic (or 2 if you're like me!)
 2 Tbsp White balsamic vinegar
 1/4 cup Extra Virgin Olive Oil (cold-pressed)
 1/4 cup Water (just plain ol' H20)
 Pinch of salt (1/4 tsp if you neeeeed measurements)

Throw them all into a measuring cup, magic bullet, food processor, blender – whatever you’ve got and smash away!  Mix until blended and enjoy the heck out of it!  I used a hand held blender in my measuring cup to make this.  This makes about 1.5 cups of dressing/dip/heaven, which adds up (using my ingredients) to be about 35 calories per tablespoon and about 0.5g of carbs.  Nom nom away my friends!

When to use this? 

As a mayo on a burger bun
As a salad dressing
As a vegetable dip 
As a topping on fresh sliced tomato...topped with crunchy bacon...maybe...just mayyybe

Or wherever you like!  I could eat this by the spoon, I will find a reason to eat this in more places than not!  Don’t overdue it though, the recipe only keeps for about 4-5 days in the fridge (keep covered).
